| Soy Sauce |

| Worchestershire Sauce |

| Heavy Cream |

Cream of Mushroom Soup Steps:
- Sweat shallots, garlic, celery & jalapeno
- Add mushrooms and cook down until they are fragrant
- Degalze with sherry
- Add vegetable stock and simmer for 30 min
- Add cream and bring back to a simmer
- Blend until smooth and pass through a chinois
- Season with Worchestershire Sauce, salt, white pepper and soy sauce

Executive Chef Paul is starting a new series on our blog called "Hermitage at Home." While we love when you come to visit us at The Hermitage, Chef wanted to find a way to also bring The Hermitage to you.
Each week, we will have a fresh new dish that Chef Paul created for you to try and share with your family and friends. Since this week is Thanksgiving, he's chosen a true comfort dish for you to enjoy:
Apple Chutney
First:
| Combine the following ingredients and bring to a simmer until apples are tender but not cooked through: |

| Honey Crisp Apples: peels and diced to a medium size |
2 qts |
| Ginger Minced |
2 oz |
| Cider |
8 oz |
| Apple Juice 100% |
8 oz |
| Cider Vinegar |
4 oz |
| Star Anise |
1 tbs |
Second:
Strain and discard the star anise and reserve apples. Reduce remaining juice by half and chill.
Third:
After juice has been chilled gently mix back in to the apple with about 2 tbs of whole grain mustard and 2 tbs of Dijon and salt to taste.
Fourth:

Peel & cut the apple into a large dice and discard the core. Combine all the ingredients in a pot and cover. On low heat simmer, stirring occasionally to keep from sticking, until the apples are tender. Remove cinnamon stick and blend till smooth. Pass through a chinois.

A destination wedding in Vermont can be everything you imagined it to be, but it requires you to make a few important decisions. Here are a few thoughts to consider:
Seasons of love, which one is yours? Fall, winter, spring and summer. Vermont is one location in which each of those seasons provide spectacular wedding backdrops. And since you're not restricted to a particular time of year, you have the flexibility to chose whether you want an indoor or outdoor wedding (or a little of both). Make sure you pick a destination in Vermont that can cater to your decision. If you would like a large wedding surrounded by flowers on a beautiful lawn, pick a venue that has that option available. If you'd first like to have a romantic dinner indoors before bringing the celebration outside, you need to be sure that your venue has this type of flexibility and has experience in providing that type of arrangement. Make the venue cater to your needs. Don't fit your wedding to the capabilities of your venue.
A wedding or a vacation? How about both! If you decide to have a destination wedding, go all the way and make it a complete getaway. This involves two important factors: on-site offerings & off-site activities. It is no secret that Vermont is a very popular vacation destination. This is largely in part due to its mountains and sporting offerings. You may want to pick a venue that allows you and your guests to take advantage of these highly-traveled destinations. Consider a wedding location that also offers transportation to and from these activity centers.

Beautiful Site; Fantastic Service
I can't possibly speak highly enough of the Hermitage Inn. They were so integral to making my wedding day as wonderful as it was. Here are my top thoughts: 1. The site itself is picturesque. The rooms at the inn or beautifully decorated and so comfortable. 2. I hadn't thought about this beforehand, but on my wedding day it struck me how perfect the layout of the Main Inn was for the ceremony, cocktail hour, and reception. People could get together to talk, etc outside on the terrace or in the bar area. It was also nice having a real bar for serving my guests. 2. The dining was so beautifully decorated that I really only needed to provide some simple centerpieces for the tables to make it complete. 3. Service! Working with their wedding coordinator was an absolute pleasure. She took care of everything. And on the day of the wedding it all went so smoothly - I didn't have to worry about a thing. The inn keeper and staff for so extremely accommodating to me and my guests. If I asked for something they'd do everything in their power to get it for me. 4. Food! Yum, Yum, Yum. Guests commented on how good the food was. I was also able to provide a selection of 4 dishes at no additional cost. The food looked and tasted delicious. It was an all round wonderful experience and I look forward to spend many anniversary nights up at the Inn. My guests were thrilled with the weekend and had nothing but compliments to pay for the setting, the food, and their overall experience.
City Girl meets Perfect Elegant Country Wedding
The minute I saw the Hermitage Inn on the Knot I knew it was the place we were going to get married. I was looking for a short destination from NYC, but nothing too far. I had a vision of an inn, cozy, elegant, with rustic grounds but not dated. I had been searching for months. The very next day I called the events coordinator at the Hermitage to get more information. She was informative and patient and I actually felt like I had a connection with the person at the other end of the line. One month later we drove to VT to visit. As soon as you drive across the covered bridge onto the property you feel like you are someplace extraordinary. The property is nothing short of stunning from the grounds to the rooms to the tavern and the dining area. The entire property was recently redone with no expense spared. The walls of the main house are filled with the artwork of the famous Michel Delacroix. The room’s are pure luxury, each with fireplaces and spectacular views. It was a relief after months of looking. My instinct was dead on. It was my perfect fit!! We wanted to share our wedding weekend with family and friends and The Hermitage served as the perfect storybook location. Our Wedding was on the last weekend in July of 2010. On Friday we held an outdoor bbq on the patio of the Hermitage inn for our rehearsal dinner. It was laid back but in an elegant sort of way and I just remember seeing everyone just really enjoying themselves. I can tell they just did not anticipate feeling like they actually got away as opposed to just having to go to “another wedding”. When dinner was over we just hung out drinking wine by the bon fire. The next day - our wedding day, I was of course a little busier than most of the folks, but was glad to know they had much of the property to enjoy. I looked out the window of my room to see a large group sitting around the pond on the property drinking lemonade. My husband’s dream for our wedding day was to catch a trout. And he did. Lucky for him the pond was stocked. Did I mention the activity center has all new equipment for guests to use no matter the season? From fly-fishing equipment to snow shoes. The gym has an amazing sauna with flat screen tv and a large window overlooking the stream. Our day was beautiful and I cannot express how amazing the staff was. From Stephen the innkeeper, to Lisa, Courtney, Laura, Rachel, and the rest of the crew, we felt like family by the end of the weekend. They were very accommodating with the planning and NO was never a response I received. I was completely relaxed up to the moment before I walked down the aisle. Remember I am from NY and for those who know me - that is a feat. The staff was there as I walked out and I remember looking back with a wave and seeing all their smiles. We had an outdoor ceremony on their grounds followed by a cocktail hour and then dinner. The food is AMAZING. Oh and the Wine selection - Ridiculous! It has consistently been that way – I have had many dinners there. I can't believe I have yet to mention that. So many amazing things to say about this place, but you really can't experience it until you go for a visit. Just go and tell them Jessica sent you ;). Since our wedding many of my friends who stayed at the property have come back. I am going for a visit in a couple of weeks and just can't wait!!!!
A Perfect Vermont Wedding
After much searching we decided that there was no venue that could compare to that of the Hermitage Inn in all of southern Vermont. We got married on May 9th which for Vermont could mean snow, mud or green grass. Fortunatly for us it meant green grass and the Hermitage did a great job with their spring clean up to get everything ready for our off season wedding. The entire Inn has been recently renovated and it shows! From a beautiful bar just perfect for cocktail hour to an amazing fireplace that sets the mood in the main dinning area. New flooring, chairs, place settings and menus. The guests rooms were also breathtaking, each with its own Vermont charm they were perfect for photographing the girls as we got ready. Though I was not present for cocktail hour, everyone said it was wonderful, we had live music in the bar area and were able to choose from a long list of apps. I was able to choose linen colors, candle colors and how I wanted the tables set up in the main dining area. After the reception we headed to the hot tub to relax with friends late night! I was really happy with the Hermitage, they had just finished their covered bridge which creates an awesome entrance to the Inn and makes directions easy. I also attended an outdoor wedding last summer there and thought that they did a very nice job creating an outdoor ceremony site. Oh and the food was great too!

The property offers a wide variety of activities… quite surprising for a small establishment. In the winter partake in dog sledding, ice skating, snowmobiling (including mini ones for kids!) and cross country skiing. Summertime is great for fishing, hiking and even Sugarhouse tours for Maple Syrup tastings. Grab your boots and kick your vehicles into 4x4! It's early Spring in Vermont and thanks to the rain and melting snow, the area's annual Mud Season is upon us.

What is Mud Season? During the Winter months, the ground becomes frozen under the snow-covered dirt roads and trails. As Spring arrives the snow begins to melt, but because the ground underneath is still partially frozen it creates a messy, muddy layer on top. Added rainfall only creates more of a mess as the rain and melting snow mixes with the thawed surface dirt, creating deep ruts that are difficult to navigate around.
Although this may sound far from appealing, both visitors and residents still enjoy the area during this time. Reduced tourism traffic provides locals with the freedom to explore off-road terrain, and for the adventurous outdoor enthusiast who doesn't mind getting their hands dirty, hiking trails are still open in the lower elevations. Hazen's Notch Association provides hikers with a list of guidelines and suggested trails during this season. You can also find helpful suggestions from The Green Mountain Club.
You can still have fun in the mud! The Hermitage is hosting their annual Club Mud event on Sunday, April 11th from 7:30-11:30 PM. $20 dollars at the door gets you entrance to a fun-filled night of food, drinks, music and friends. For more information, call 802-464-3511.
